Peytie Pies {A Super Bowl Dessert}


Even though my house mourns a Super Bowl without the Ravens, this UT grad is happy to cheer tonight for Peyton Manning and the Colts (if you didn't know...Peyton spent college quarterbacking at Tennessee). I'm even going to get out of my Blizzard attire (read: pajamas) long enough to put on a blue shirt.  Only because I don't have any royal blue pajamas.

Today will be spent (not unlike yesterday) cooking up lots of hearty, unhealthy eats, most of which  you can find (where else?) in The Pioneer Woman Cookbook, like meatballs and potato skins. I am sharing with you the dessert I'll be eating because it's appropriately named for the soon-to-be 2010 Super Bowl MVP, Peyton Manning.

I once heard Peyton's mom, Olivia, share in a television interview that her nickname for Peyton is Peytie Pie. Hee-hee. Do you think the other players heard that and taunt him by calling him PP between snaps? I doubt it. Football players don't watch The TODAY Show; they watch whatever comes on early at ESPN.


None of my Super Bowl menu gives nod to the team for whom I will be cheering, so in a desperate attempt to have just a teeny, tiny bit of whimsy in celebrating football's biggest night, I dug really deep, Googled "blueberry pie" (because blue = the Colts' color, if you aren't following me) and went with the first recipe that could be made in individual (Indy?? Yeah, too much) forms and ta-da...the Peytie Pie was born.


Peytie Pies (aka, Mini Cheese Cakes, as shared by Cooks.com)
1 (8 oz.) pkg. cream cheese

1 egg
1/2 c. sugar
1 tsp. vanilla
12 "Nilla Wafers"


Place 1 "Nilla Wafer" in the bottom of each paper muffin liner (then inserted in muffin cup). Mix all ingredients with mixer. Cover each "Nilla Wafer" with cream cheese mixture to half fill each muffin cup.


Bake at 375 degrees for 20 minutes. Let cool then top with your choice of pie fillings (blueberry if you want them to be Peytie Pies; Mrs. Manning calls Eli E-Pie, too - so cherry could work if you cheer for the Giants). Makes about one dozen.

Nice! Am about to get my cook on as well. Surprised not to see a signature cocktail from you for Super Bowl nation. perhaps something with snow cream? ;)

ahh! i love all things manning, and this is no exception. what a great way to celebrate peyton.

ps- wyatt has a book written by archie, peyton and eli about football, which heavily feature olivia. it's one of my faves :)
